Cracker and Cheese Hors D'oeuvres with Tomato and ParsleyYou’re getting 2 for 1 with these recipes. They are so simple that it felt like cheating to just give you one. Each recipe takes less than 10 minutes to prepare!

I’ve posted the Cheesy Spread (that has absolutely NO cheese) recipe before. This is just in case you need reminding of how scrumptious it really is. These 2 spreads can make your holiday entertaining sooo much easier …

Cashew Cheese

This is a fairly recent addition to my repertoire, and I’ve been using it a lot. You can eat this every day in a bowl with a bunch of veggie chips or crackers. Or, dress it up as in the photo, take it to a potluck and wow your friends.

2 cups soaked cashews (soak for at least an hour, or as long as overnight)
1 large clove garlic
juice of 1/2 lemon
½ tsp Himilayan Rock salt
¼ to ½ cup water

Pop everything into the food processor and blend for a few minutes to get that really smooth texture, and voila!

Cheesy Spread

This looks and tastes like a cheddar cheese spread, but doesn’t roasted pepper dip with almonds and garlic closeuphave a smidge of dairy in it. Don’t freak out though – it tastes great.

½ cup pine nuts
½ cup macadamia nuts (or cashews or almonds)
½ cup sunflower seeds
1-½ cups red pepper
2 cloves garlic
½ peeled lemon
1 Tbsp Bragg’s

Put all ingredients in food processor and blend until smooth.

See – I told you it was easy. Now go and relax with all this extra time you have 😉
