Vegan Ginger Snaps

CELEBRATIONS cookbook is almost ready! I know I should be calmly working in the background getting the final details tied down. Instead I’m doing a bouncy happy dance in my chair, so impatient to share my joy in the delightful deliciousness coming your way.

So I’m cheating – just a little.

Here’s a recipe that is NOT in the cookbook (but it’s just like ones that are). Try it out and let me know if you like it – it’s one of my favourites. Oh, and by the way, all 25 recipes in CELEBRATIONS are gluten and dairy free, and just right for Christmas dinner or any other celebratory meal.

Vegan Ginger Snap Cookies

Oh snap! Watch out for these addictive little taste treats! They are so easy and fast to make … and easy to eat. This recipe is the result of blending an old friend-shared recipe, on-line research to up nutritive density and the exacting discernment of my taste buds.

As always, please use organic ingredients. Your body will thank you.

  • ½ cup coconut oil
  • 1 cup coconut sugar
  • 1 tbsp molasses
  • 1 tbsp water
  • 1 cup almond flour
  • ½ cup coconut flour
  • 2 tsp ginger
  • 1 tsp cinnamon
  • ¼ tsp cloves
  • scant ¼ tsp Himilayan Rock salt
  • 1 tsp baking soda

Warm up the coconut oil, coconut sugar, molasses and water. Add to the dry ingredients (almond and coconut flours, spices, salt and baking soda – blended together). Stir until completely blended then form into small balls about 2 cm in diameter. This recipe makes 2 dozen. You can leave the balls as is for a more rounded cookie, or flatten the balls for a more traditional ginger snap cookie shape. Pop the cookie sheet in a 350°F oven for about 10-12 minutes and you’re done.

Whatever  way you make these delectable little morsels, they are hard to resist … the voice of experience here, having eaten 3 of them as I write this. I only needed to eat 1 as quality control, but …

You can fancy them up by adding toppings, or piping simple Christmas designs on them. They will look great but couldn’t possibly taste any better.
